Feels like we are finally getting our life back ag Feels like we are finally getting our life back again🙌🏼
How we’ve missed our local fruit market, playing on the playground, meeting new people and playing in the fountains.
Of course we are beeing extra careful still wearing gloves and masks in indoor public places, not taking public transport and keeping a reasonnable social distance.

Messy brunch table. Brunch is my favorite and it a Messy brunch table.
Brunch is my favorite and it always means it’s a special day. When I grew up we would have brunch on our birthdays, christmas and other occasions.
So when Eid came along last weekend the best way I lnew how to celebrate was the non traditional way😂🥳
We made scones and apple muffins(recipe on my page), with a big smoothie for me and coffee for hubby (I don’t like coffee how crazy am I?!😂)

Alot of people have been asking how I make this and its so easy!
First you will need one of these 3 machines:
🍦a high speed blender like the vitamix (most expensive choice)
🍦a high speed food processor
🍦the @yonanas machine (the least expensive: 40€)
👉🏼If you use the first option you will need to add a bit of liquid to get it going like almond milk or anyother plant milk of your choice.
Freeze your bananas and fruit is a tupperware overnight. I use about 2 chopped bananas with 2 or 3 handfulls of anyother fruit you like.
👉🏼if you use a food processor you can make it without the liquid but it’s still easier depending on the consistancy you like.
👉🏼the last one you won’t need any liquid at all. Chop your frozen fruit and put put them into the top opening. Press them down with the tamper. It will come out chunky at first. Scoop it up with a spoon and put back through the machine until fully blended and fluffy. It takes 2 or 3 times but I promise it goes fast.
Enjoy with some granola and fresh fruit on top, maybe also a drizzle of your favo nut butter🥣🍦

We finally ventured out and went down town this sunday. We figured not many people would be out sonce the stores are closed anyway.
We went to our favorite vegan place @veganwaf they have the best icecream and waffles🤤
We wandered around and had the best time just doing normal stuff.
Youssef asked for sushi after eating a big chocolate icream and fell asleep that evening saying « i’m happy »🥰

We made another egyptian recipe just in time for E We made another egyptian recipe just in time for Eid tomorrow🌙⭐️
They are cookies called Ara’eesh wich are filled with dates👌🏼 they go perfectly with tea or coffee☕️
This is the authentic egyptian recipe but I’ll be working on a low fat version for sure😅
🍪4 cups flour
🍪2 tbsp dry yeast
🍪2 tbsp sugar(sub with agave sugar or coconut)
🍪1/4 tsp salt
🍪1/2 cup vegan butter
🍪1/2 cup oil
🍪2 tbsp sesame seeds+more for garnish
🍪date paste (ready made or just blend 1/2 kg of soaked dates in the food processor until it forms a paste)
🍪1 tbsp vegan butter to mix with the date paste
🍪2 tbsp water+1 tsp sugar
🍪1/2 cup dairy free milk
👉🏼mix all dry ingredients together including the dry yeast and sesame seeds
👉🏼melt the butter in a sauce pan and add the oil. Let it cool and gradually mix in your dry ingredients until a rough dough forms. Don’t pour it hot it will kill the yeast.
👉🏼warm up the milk and add to the dough. The dough will be sticky but start kneeding for 5 mind and it will harden and come together.
👉🏼cover with a tea towel and let it sit for 10 min.
👉🏼blend your date paste with the butter.
👉🏼seperate the dough in equal parts
👉🏼roll it into a rope and then flatten with your hand or a rolling pin. Don’t make it too thin. About 1/2 cm thick and 4 fingers wide.
👉🏼roll a portion of your date paste and roll into a rope. Add it into the dough, flatten and fold the dough over. Seal the edges and flatten again lightly.
👉🏼cut the dough perpendicularly into even portions. About 2 fingers wide.
👉🏼mix the water and sugar. With a pastry brush, brush the tops of your ara’eesh and add sesame seeds.
👉🏼bake for 18 to 20min on 180C

Youssef has been so cranky and getting into alot of mischief. I am running on fumes from fasting all day, going to bed late just to get another sip of water before the sun rises, to going back to work,...
It’s like all that sould have happened during the lockdown is happening right now.
I’ve been so impatient and short with youssef. Usually we wake up and have a great time making breakfast and playing games.
Eid is this weekend so thinking things will go back to normal soon. I am also thinking Youssef is acting out in response to how i’m feeling.

This is for sure a very emotionnal time for most people with the lockdown slowly lifting. We live in such strange times. In a way we are looking forward to life going back to normal but on the other hand #covid_19 is still around and we need to stat safe.

I think it has to do with the fact that parents often restrict their child’s fruit intake. I remember eating lots of fruit as a kid but there was never quite enough.

I am shoked parents think fruit has too much sugar.
🍓The fructose in fruit is litterally brain food. If you don’t eat fruit you will crave processed sugar. So eat your fruit and let your kids eat as much as they want!

🍉Fruit are a source of many essential nutrients that are underconsumed.
🍍Dietary fiber from fruit help move things along naturally and reduces cholesterol and risks of heart disease.

I love getting inpired by others. @plantsmywifeandi made these awesome pitta’s not long ago and decided that was a GREAT idea🙌🏼

I decided to make my own vegan tzatziki sauce too. Wich is now on my favorite sauce list now🤤

🥒1/3 cup greek dairy free yoghurt (i use @sojade_officiel )
🥒2 tbsp vegan mayo
🥒1 mini cucumber (or half a big one)
🥒1 garlic clove
🥒1 tbsp lemon juice
🥒2 sprigs of fresh dill
🥒salt and pepper to taste
👉🏼grate the cucumber, crush the garlic, chop the dill, squeeze the lemon in a bowl.
👉🏼add the yoghurt and mayo and stirr
👉🏼add salt and pepper and stir. It’s that easy!

The pitta was made with @wheaty_france vegan kebab strips. Pan fried with a little smoked paprika.
Added fresh tomatoes, lettuce, red cabbage, pickled red onions and of course a big dollup of your freshly made tzatziki sauce🙌🏼#sojadoreca

I use the @yonanas machine to make the nicecream. It’s only bananas, cherries and blackberries. Pass them through the machine a few times and voila fluffy nicecream for breakfast!🌸🤩

I got kind of carried away when I decided to make a simple apple pie to use up some apples before going grocery shopping. Then decided it would be awesome to use my crumble recipe to top it off. 🤤👌🏼

Egyptian recipe alert!🇪🇬 Mahshi is stuffed v Egyptian recipe alert!🇪🇬
Mahshi is stuffed vegetables with a mixture of rice and fresh herbs. You can stuff mini zucchini, wine leaves, potatoes and peppers. But personnally my fave are stuffed canbage leaves.

-1 onion
-1 garlic clove
-3 cans of tomato sauce
-1/2 tbsp black pepper -1 tbsp cumin
-1/2 tbsp garlic powder
-1 tbsp coriander seeds
-salt to taste
-1 bunch coriander
-1 bunch dill
-1 bunch parsley
-2 cups of rice
-2 vegetable cubes
-1 big white cabbage
👉🏼grate the onion and the garlic it’s important to not have any pieces.
👉🏼chop the fresh herbs finely
👉🏼fry up the onion until translucent. Add the garlic and fry until fragrant.
👉🏼add the canned tomato sauce. Once its starts simmering add spices, one vegetable cube and let simmer for a minute.
👉🏼add the herbs give the sauce a mix and turn off the fire. Keep the stalks for lining the bottom of the pot later.
*if you‘re making your sauce in advance. Reserve the rice for when you are going to stuff the cabbage. otherwise add it in directly.
👉🏼take the cabbage and cut around the stem to remove it.
👉🏼place the cabbage with the hole down in a pot of boiling water. Cook for about 10min before turning it right side up. Once you can pull off the leaves take it out and seperate them. Cut out the hard parts and save to line the pot & add the leftover stalks we kept from the herbs.
👉🏼place the leaves in a bowl of cold water. Sift and pat dry.
👉🏼take about a teaspoon of the filling. Squeeze the excess juice & roll tightly. Once the rice is secure if you have any cabbage leaf left cut it off.
*Line the pot with the cabbage rolls very tightly together.
👉🏼once your pot is full you will be left with the extra juice frol the filling we squeezed out. Save it and mix it with the water to pour in the pot. Then also add a veggie cube. Boil it and add. Pour until about the middle of the last layer and leave the top out.
👉🏼Place a smaller lid directly on top of the rolls and then place the right lid on top of everything. Cook on low until the rice is done. It will take about 45 min to an hour.

But most importantly they aren’t biodragradable😥

On a cuter note Youssef has been seeing us whearing masks now for quite some time and has been wanting to wear one too. He even kept it during the whole shoping trip😍😂
